Bringing you one of my favorite and easy to make recipes. This Bangers and Mash with Onion Gravy dish is certainly one of my husband’s favorites to enjoy. If you love hearty meals, give it a try, it’s seriously delish! Don’t forget to let me know in the comment section below how much you loved it!

Ingredients you’ll need:

6   Russet potatoes ( OR 2 medium heads of cauliflower if you are cutting down carbohydrates)

8 fl oz   Chicken or vegetable broth

4   Cloves garlic minced

1   Small bunch Italian parsley

8   Pork sausages ( I prefer spicy ones but it’s definitelly totally up to you)

2   Medium yellow onions

6 – 8 fl oz Heavy cream

Arrowroot starch/powder

Black pepper

Salt

Virgin olive oil


Preparation:

  1. Fill a large pot about halfway with water, cover, and bring to a boil.
  2. Wash and peel potatoes and place into pot with the boiling water to cook. (Potatoes will be fully cooked once you can insert a knife softly through the center of the potatoes.) If using cauliflower instead, wash and cut off the leaves. Separate into small florets, cut the thick stems into smaller pieces and cook until very tender, 6-7 minutes.
  3. Heat a skillet over medium-high heat. Add the sausages to skillet and cook until browned on all sides, 5-6 minutes. Reduce heat to medium, and continue cooking until cooked through, 10-15 minutes. Transfer to a plate.
  4. Thinly slice the two onions into half rings. Once sausages have been transferred, add oil and onions to skillet. (I cook the onions in the same skillet as the sausages.) Cook, stirring frequently, until onions are softened and caramelized, about 10 minutes.
  5. Drain the potatoes (or cauliflower) in a colander, then return to saucepan. Add heavy cream, garlic, oil, salt, and pepper.
  6. Blend with a potato masher. Cover and set aside.
  7. Sprinkle onions with starch powder and mix until starch is evenly incorporated with the onions.
  8. Pour in broth and cook until mixture is thickened, 4-5 minutes. Season with salt and pepper.
  9. Wash, dry parsley and chop the leaves.
  10. Return sausages to skillet on top of the onion gravy and turn until heated through.

To serve, place potato (or cauliflower) puree in a shallow bowl. Add sausages and top with onion gravy. Garnish with parsley and enjoy!
